Ingredients: One canned Brunswick Mackerel in natural oil 1/2 lime 2tbsp / 30ml vegetable oil One onion, chopped Two cloves garlic, minced One hot pepper, seeded and chopped One tbsp curry powder 1/4 cup / 50ml water 1/2 cup / 125ml coconut milk Two tbsp chopped Coriander leaves Salt. Directions: Drain Brunswick Mackerel in Natural Oil, remove bones, and squeeze on lime juice. Set aside. Heat oil in sauté pan; add onion, garlic and hot pepper and sauté until fragrant. Meanwhile, combine curry powder with water. Add to pot and cook until most of the water has evaporated. Add Brunswick Mackerel and break into 1 inch pieces while stirring, making sure all pieces are covered in curry. Add coconut milk and stir, cover and simmer for about five minutes more, adding a little water to prevent sticking. Garnish with Coriander leaves and serve hot with rice.
